The numbers shown on the sign, are they stickers, magnets, a roller?  How do the numbers work?
  The numbers are turned on 3 concentric wheels.
  Slide up or down on the appropriate wheel to change the display.

The second question is, if they are not magnet, would it be possible to do magnetic numbers?
  This product is made entirely of plastic construction.
  No possibility to use magnetic numbers.

How would they turn the numbers if this is mounted to the wall?
Turn the wheels by direct contact on the face of the wheel. The only exposed contact area is the number display itself. So, use finger or thumb contact directly on each number to rotate in desired directon.

Is the dial on the side of the board? No.

Can they turn the numbers from the front of the board? Yes, per first answer above.

If this is mounted on a wall, how far does it protrude from the wall?
Overall product thickness is approximately 1/8", except for the 6 brass mounting grommets as shown in the product image. The grommets are approximately 3/16" thick.
Based on this, I would expect the overall protrusion from the wall after mounting to be approximately 1/4".
